  • 4 small russet potatoes

  • 1 tablespoon of olive oil

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 teaspoon paprika

  • 1/2 cup cheddar cheese, grated

  • 2 tablespoons bacon bits

  • 1 green onion, diced diagonally

  • 1/4 cup sour cream

How to Make TGI Fridays Loaded Potato Skins

  1. Wash your potatoes and dry them off. Prick the skins 5 times all over with a fork.

  2. Place the potatoes on a microwave-safe plate. Microwave for 8 minutes, turning the potatoes over halfway. Once the potatoes are squishy on the outside, they are cooked! Remove them carefully from the microwave and set them in the fridge to cool completely. Note: 8 minutes works for 4-inch potatoes. If you have larger potatoes, you may need to cook for longer.

  3. Once they are cooled completely, make lengthwise cuts on each potato and use a small spoon to scoop out the inside of the potato. Leave about 1/4 inch for the toppings. Store the scooped mashed potato in the fridge for another recipe! I like to add some butter, olive oil, and salt & enjoy it with some eggs!

  4. To the potato skins, add a drizzle of olive oil, then a sprinkle of salt, pepper, and paprika to the inside. Rub it in with your hands.

  5. Place the potatoes hollow side up in the air fryer.

  6. Air fry at 360F for 7 minutes. 

  7. Open the air fryer basket, and sprinkle potatoes with cheddar cheese, bacon bits, and green onions.

  8. Air fry at 360F for another 3 minutes or until cheese is melted.

  9. Drizzle with sour cream and cilantro to serve!
