Crispy Air Fryer Buffalo Chicken Tacos Recipe (Gluten Free)

Troy is obsessed with buffalo anything. It has to be in our fridge at all times. He puts it on rice, chicken, ground beef, even eggs. Honestly, if there was a way to drink it, he probably would. I like buffalo too, just a little more mild, so I wanted to make something that still hits that flavor he loves but works for me too. And of course it had to be tacos. He’s from San Diego, so tacos are always happening.

Most weeknights he’s working until around 5, and I’m out with Olive at the park, library, or some kind of activity. We walk in the door around 5:30 and everyone is hungry. That’s not the time I want to start thinking about dinner. So this is the recipe I came up with. It’s actually 20 minutes start to finish. I’ve timed it. Even Troy could make this, and he is a very beginner cook.

Air fryers are my go-to for meals like this. You get that crispy texture without standing over a pan, and you don’t have to babysit anything. Just load it up and let it do its thing. I’ve always given Olive whatever we’re eating, and this is a great one for that. If you’re a little nervous about the buffalo sauce for kids, just add a drizzle of honey. It cuts the heat right away and makes it more kid-friendly.

I use Primal Kitchen Buffalo Sauce because it’s the cleanest one I’ve found and it actually tastes really good. It’s one of those easy shortcuts that makes this whole recipe work, and I usually grab it on Thrive Market when I’m restocking pantry staples.

Rotisserie Chicken

This is what makes this recipe actually doable on a weeknight.

  • Already cooked and seasoned

  • Shreds in under 2 minutes

  • No waiting, no extra prep

Most grocery store rotisserie chickens are pretty clean, just check the label. You’re looking for:

  • Chicken, water, salt, spices

  • Avoid anything with fillers or added oils. 

You’ll get about 3 to 4 cups of shredded chicken from one, so you’ll have leftovers for another meal.

Primal Kitchen Buffalo Sauce

Most buffalo sauces are made with seed oils and additives. This one keeps it simple.

  • Made with avocado oil

  • No added sugar or fillers

  • Clean ingredient list

The flavor is:

  • Tangy

  • Slightly buttery

  • Mild enough for families

It also heats really well in the air fryer, which not all sauces do. This is one of those shortcuts that actually makes the recipe better. I usually grab it on Thrive Market when I’m restocking pantry staples, but you can also find it on Amazon here if you need it faster.

Gluten Free Tortillas (6-inch)

Not all gluten free tortillas work the same in the air fryer.

What works best:

  • Siete Almond Flour tortillas

  • Siete Cassava Flour tortillas

Why:

  • Soft enough to fold

  • Don’t crack under heat

  • Crisp up well

If they feel stiff:

  • Wrap in a damp paper towel

  • Microwave for 15 seconds

Corn tortillas also work if you prefer them. They’re naturally gluten free and crisp up nicely, just a different texture.

Garlic Powder

  • Only 1/4 teaspoon

  • Rounds out the buffalo flavor

  • Doesn’t compete with the sauce

Don't skip it, but don't increase it either; the sauce is doing the heavy lifting here.

Cheese

This is what makes the tacos extra good.

  • Add about 2 tablespoons before the chicken

  • Melts into the filling

  • Gets slightly crispy at the edges

Best options:

  • Pepper jack for more heat

  • Cheddar for classic flavor

  • Monterey jack for kids

Dairy free:

  • Violife

  • Miyoko’s

Green Onions

Added after cooking.

  • Fresh

  • Mild bite

  • Balances the heat

Red Onion

Adds a little more texture and sharpness.

  • Crunch

  • Slightly stronger flavor

If your kids won’t eat it:

  • Skip it

  • Use more green onions

Ranch Dressing

Buffalo and ranch just go together. Primal Kitchen or Chosen Foods both make a really good gluten free, dairy free ranch that works perfectly here. It’s made with avocado oil and doesn’t have any of the usual fillers.

I usually grab mine on Thrive Market when I’m ordering pantry staples, but you can also find similar options on Amazon if you need it quickly.

If you want to make your own, you can keep it simple:

  • Greek yogurt

  • Lemon juice

  • Garlic powder

  • Onion powder

  • Dill

  • Chives

Oil Spray

This step is not optional.

  • Keeps tortillas from drying out

  • Helps them crisp instead of getting chalky

  • Gives you those golden edges in the air fryer

A quick spray on both sides before air frying makes a big difference. I usually use an avocado oil spray like this one since it handles the heat better, but either works.

How to Make Air Fryer Buffalo Chicken Tacos

1. In a medium bowl, combine shredded rotisserie chicken, Primal Kitchen Buffalo Sauce, and garlic powder. Toss until fully coated.

2. Lay GF tortillas flat on a clean surface. Sprinkle on the cheese, then spoon the buffalo chicken mixture onto one half of each tortilla. Do not overfill. Fold each tortilla in half over the filling.

3. Preheat the air fryer to 400°F. Lightly spray both sides of each folded taco with oil spray.

4. Place tacos in a single layer in the air fryer basket. Do not stack or overlap. Air fry for 5 to 6 minutes, flipping once at the 3-minute mark, until the edges are golden and the tortilla is slightly crisp.

5. Remove from the air fryer. Top each taco with sliced green onion, red onion, and a drizzle of ranch dressing. Serve immediately.

Kitchen Tools I Use in This Recipe

Tips for Cooking This for Kids

  • Use less sauce. Start with 3 tablespoons of Primal Kitchen instead of 1/3 cup for kids' portions. You can always serve extra on the side for adults who want more heat.

  • Skip the red onion for picky eaters. Green onions are milder and less likely to get picked out.

  • Add a small drizzle of honey to the chicken mixture before air frying. It takes the edge off the heat and adds a slight sweetness that kids respond well to without changing the recipe for adults.

  • Let kids assemble their own. Putting out the components separately and letting them build their own taco increases the odds they'll actually eat it. Works especially well for the 4-10 age range.

  • Ranch is the dipping sauce. If they're hesitant, tell them it's a dipping taco. Every kid dips things.

Tips for Making It Hotter

  • Add hot sauce directly to the chicken mixture. A teaspoon of Frank's RedHot or Tabasco alongside the Primal Kitchen sauce bumps the heat without changing the flavor profile much.

  • Use cayenne. Add 1/8 to 1/4 teaspoon of cayenne pepper to the chicken mix. It builds heat from the inside rather than just coating the surface.

  • Swap ranch for blue cheese. Blue cheese dressing (or crumbles) cuts heat differently than ranch and leans more into the classic buffalo wing experience. For dairy free, there are decent cashew-based blue cheese alternatives.

  • Serve with pickled jalapeños on top. They add heat plus acid, which actually makes the buffalo flavor pop more.

  • Don't dilute the sauce. The 1/3 cup ratio in this recipe is intentionally conservative. For heat seekers, go up to 1/2 cup.

Substitutions

If you don’t have everything on hand, this recipe is really flexible. Here’s what you can swap:

  • Rotisserie chicken: Use cooked chicken breast or chicken thighs instead

  • Primal Kitchen Buffalo Sauce. Any clean-label buffalo sauce works, or make your own with Frank’s + butter

  • Cheese: Any cheese works here, including dairy free options. Use whatever you have

  • Gluten-free tortillas (Siete). Swap for corn tortillas, regular flour tortillas, or lettuce wraps for a low-carb option

  • Ranch dressing: Use blue cheese dressing, sour cream, or a Greek yogurt-based dip

  • Green onion: Substitute chives or skip

  • Red onion: Use pickled red onion, white onion, or skip

  • Avocado oil spray. Olive oil spray works just as well

  • This usually happens from overfilling or using cold tortillas. Stick to 2 to 3 tablespoons of filling, warm your tortillas first, and place them seam side down. If needed, use a toothpick to hold them closed.

  • Use a dairy free cheese and a dairy free ranch like Primal Kitchen or a coconut-based version. The buffalo sauce itself is already dairy free.

  • Just swap in regular flour tortillas. Everything else stays the same.

  • You have a few easy options. Make a rice bowl with rice, buffalo chicken, ranch, and green onion. Turn it into a quick salad with greens, red onion, and dressing. Or make a buffalo chicken quesadilla with a tortilla and cheese, cooked for about 2 minutes per side.

  • Make the buffalo chicken ahead by shredding your rotisserie chicken and tossing it with buffalo sauce. Store it in an airtight container in the fridge. During the week, just fill your tortillas and air fry for about 6 minutes. Dinner is done faster than takeout.
