Crispy Air Fryer Buffalo Chicken Tacos Recipe (Gluten Free)
Troy is obsessed with buffalo anything. It has to be in our fridge at all times. He puts it on rice, chicken, ground beef, even eggs. Honestly, if there was a way to drink it, he probably would. I like buffalo too, just a little more mild, so I wanted to make something that still hits that flavor he loves but works for me too. And of course it had to be tacos. He’s from San Diego, so tacos are always happening.
Most weeknights he’s working until around 5, and I’m out with Olive at the park, library, or some kind of activity. We walk in the door around 5:30 and everyone is hungry. That’s not the time I want to start thinking about dinner. So this is the recipe I came up with. It’s actually 20 minutes start to finish. I’ve timed it. Even Troy could make this, and he is a very beginner cook.
Air fryers are my go-to for meals like this. You get that crispy texture without standing over a pan, and you don’t have to babysit anything. Just load it up and let it do its thing. I’ve always given Olive whatever we’re eating, and this is a great one for that. If you’re a little nervous about the buffalo sauce for kids, just add a drizzle of honey. It cuts the heat right away and makes it more kid-friendly.

Gluten Free Tortillas (6-inch)
Not all gluten free tortillas work the same in the air fryer.

Buffalo and ranch just go together. Primal Kitchen or Chosen Foods both make a really good gluten free, dairy free ranch that works perfectly here. It’s made with avocado oil and doesn’t have any of the usual fillers.

A quick spray on both sides before air frying makes a big difference. I usually use an avocado oil spray like this one since it handles the heat better, but either works.
How to Make Air Fryer Buffalo Chicken Tacos
1. In a medium bowl, combine shredded rotisserie chicken, Primal Kitchen Buffalo Sauce, and garlic powder. Toss until fully coated.
2. Lay GF tortillas flat on a clean surface. Sprinkle on the cheese, then spoon the buffalo chicken mixture onto one half of each tortilla. Do not overfill. Fold each tortilla in half over the filling.
3. Preheat the air fryer to 400°F. Lightly spray both sides of each folded taco with oil spray.
4. Place tacos in a single layer in the air fryer basket. Do not stack or overlap. Air fry for 5 to 6 minutes, flipping once at the 3-minute mark, until the edges are golden and the tortilla is slightly crisp.
5. Remove from the air fryer. Top each taco with sliced green onion, red onion, and a drizzle of ranch dressing. Serve immediately.

Tips for Cooking This for Kids
Use less sauce. Start with 3 tablespoons of Primal Kitchen instead of 1/3 cup for kids' portions. You can always serve extra on the side for adults who want more heat.
Skip the red onion for picky eaters. Green onions are milder and less likely to get picked out.
Add a small drizzle of honey to the chicken mixture before air frying. It takes the edge off the heat and adds a slight sweetness that kids respond well to without changing the recipe for adults.
Let kids assemble their own. Putting out the components separately and letting them build their own taco increases the odds they'll actually eat it. Works especially well for the 4-10 age range.
Ranch is the dipping sauce. If they're hesitant, tell them it's a dipping taco. Every kid dips things.
Tips for Making It Hotter
Add hot sauce directly to the chicken mixture. A teaspoon of Frank's RedHot or Tabasco alongside the Primal Kitchen sauce bumps the heat without changing the flavor profile much.
Use cayenne. Add 1/8 to 1/4 teaspoon of cayenne pepper to the chicken mix. It builds heat from the inside rather than just coating the surface.
Swap ranch for blue cheese. Blue cheese dressing (or crumbles) cuts heat differently than ranch and leans more into the classic buffalo wing experience. For dairy free, there are decent cashew-based blue cheese alternatives.
Serve with pickled jalapeños on top. They add heat plus acid, which actually makes the buffalo flavor pop more.
Don't dilute the sauce. The 1/3 cup ratio in this recipe is intentionally conservative. For heat seekers, go up to 1/2 cup.
