If there’s one snack that makes me feel like I’m treating myself and still keeping it on the wholesome side, it’s Cinnamon Sugar Sweet Potato Fries made in my air fryer. These healthy sweet potato fries are the perfect balance of cozy flavor and light crunch, all without the need for deep frying. There’s just something so good about the combination of warm cinnamon, sweet caramelized edges, and crispy golden fries tossed in the perfect cinnamon sugar mixture.

If you’ve ever pulled soft, soggy fries out of your air fryer, you’re definitely not alone. Getting that perfect crispy texture just comes down to a few small steps.

1. Preheat the air fryer
I used to skip this step, but starting with a hot basket helps the fries crisp up right away instead of steaming.

2. Add a little starch
Toss the fries with a small amount of arrowroot starch or cornstarch before adding oil. It creates a thin coating that makes a huge difference in the crunch. The arrowroot starch is a solid workaround if you don’t have time to soak the fries.

3. Soak if you can
If you have a few extra minutes, soak the cut fries in cold water for 20 to 30 minutes. This removes some of the excess starch, which means extra crispy fries later. Drain them well and pat completely dry. I usually spread them out on a kitchen towel to get rid of every bit of moisture. I’ll be honest, I don’t always take the time to soak them, but when I do, the results are worth it.

4. Don’t crowd the basket

  • 3 tablespoons coconut or brown sugar

  • 2 teaspoons cinnamon

  • Pinch of sea salt before cooking + more for sprinkling after

Cutting sweet potatoes can be tricky because they’re so firm. Here’s my go-to method:

  1. Rinse the sweet potato under cool water and peel with a vegetable peeler to remove the skin.

  2. Slice off both pointed ends so you have flat surfaces, this makes the potato more stable and safer to cut.

  3. Stand the sweet potato upright on one of the flat ends. Slice straight down to make ¼-inch thick planks (like long flat sheets).

  4. Stack a few planks at a time and slice them again lengthwise into even ¼-inch sticks.

  5. Try to keep all the fries about the same thickness so they cook evenly in the air fryer.

Instructions

1. Preheat the air fryer to 380°F.

2. Peel & cut sweet potatoes: Slice off both ends, stand upright, and cut into ¼-inch planks. Stack and slice into even matchsticks or wedges.

5. Mix sugar and cinnamon in a small bowl. Once fries are done, let them rest for 2 minutes (this helps the sugar stick without melting off), then toss with the cinnamon-sugar mixture.

6. Sprinkle it with a bit more salt before serving.
