  5. Slice Carefully: With a very sharp knife, slice the breast horizontally, starting at the thickest side and cutting toward the thinner side. Keep the knife parallel to the cutting board and cut all the way through.

  6. Even Out the Thickness: If the cutlets are uneven, place a piece of plastic wrap over them and gently pound with a meat mallet or rolling pin until they are uniform in thickness.
