Vegan Chickpea Burger Ingredients
Ingredients:
1 teaspoon avocado oil
1 onion, diced
3 cloves garlic, minced
1 can chickpeas, drained and rinsed
1/2 teaspoon paprika
1/2 teaspoon coriander
1/2 teaspoon cumin
1/2 cup chopped cilantro
1/2 cup flour (gluten free, whole wheat, white or oat works), divided
2 tablespoons avocado oil
How to Make a Vegan Chickpea Burger
Dice the onion and mince the garlic.
Heat a skillet to medium heat. Add the avocado oil. Once it’s hot (30 seconds or so), then add the diced onion and minced garlic. Saute until the onions are translucent (about 5 minutes). Careful not to burn the garlic.
Drain the can of chickpeas and rinse it to remove any excess coating. Add the drained and rinsed chickpeas to a food processor. Pulse a few times.
Add the sauteed onion and garlic directly to the food processor. Add your spices like paprika, coriander, cumin, fresh cilantro and ¼ cup of flour directly into the food processor.
Blend for 30 seconds (scraping down the sides if necessary) until well combined. Add the remaining 1/4 cup flour, process again.
Sprinkle 1 tablespoon of flour onto the counter and roll the dough into 6 even rounds. I like using an ice cream scoop or cookie scooper to get even shapes.
Place the burger onto a parchment paper lined baking sheet, press down with the back of a cup to flatten slightly.
Place the baking sheet in the freezer for about 20 minutes to firm the veggie patties.
After 20 minutes, heat a skillet over medium heat with 2 tablespoons avocado oil. Once hot, add the burgers to the oil & shallow fry for 5 minutes each side.
Serve however you like! I love using them on a big salad, over rice with veggies, with my favorite bun & burger toppings or just as a simple handheld snack.
