Crunchy Sweet Potato Breakfast Bowl

Ingredients
Mashed sweet potatoes
- 1 sweet potato, medium or large
- 1/4 cup plant-based milk
- 1 teaspoon maple syrup
- 1/4 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/4 teaspoon nutmeg
Caramelized Banana
- 1 banana
- 1 teaspoon coconut oil
Toppings
- 1/2 cup plain, full-fat greek yogurt
- Your favorite granola, I used Grandy Oats Grain-Free Granola
- Peanut butter
- 1/4 teaspoon cinnamon
Instructions
- Preheat the oven to 425 degrees Fahrenheit. Wash and scrub a large sweet potato well. Poke a few holes in the sweet potato. Place it on a baking sheet. Bake for 45 minutes.
- While the sweet potato is baking, heat a non-stick skillet over medium heat. Add the coconut oil, and let it heat up. Once hot, add your sliced banana. Cook for 4 minutes on that side, then flip. You will be left with a caramelized color and flavor. Set aside for topping on your breakfast bowl.
- Once the sweet potato is baked, mix it in a bowl with the almond milk, maple syrup, and spices. Mash well to combine.
- Serve in your bowl with the yogurt, granola, caramelized banana, peanut butter, and cinnamon.
