Persian Chicken Ingredients

  • Organic Greek yogurt: I prefer using plain, full-fat organic Greek yogurt. It adds a wonderful tang, and it makes the chicken very tender! You can use any plain yogurt you prefer.

  • Olive oil: Use a high-quality oil for the best results. 

  • Seasoning: I season the chicken with a spice blend of salt, black pepper, garlic powder, paprika, and turmeric.

  • Saffron: I recommend using a powered saffron. If your saffron comes in threads, just grind them with a mortar and pestle. Then add your water! I prefer using saffron from Sadaf; you can get it on Amazon!

  • Water: Use warm water in order to bloom the saffron (saffron water).

  • Lemon juice: This a bright acidity to the chicken.

How to Make Persian Chicken

  1. Begin by trimming off any fat from the chicken. Then, add the chicken to a large Tupperware container or ziplock bag. Next, add the onion, Greek yogurt, olive oil, salt, pepper, garlic powder, paprika, and turmeric.

  2. Next mix the saffron threads with warm water, mix it until it dissolves. 

  3. Combine the saffron infusion with the remaining ingredients and thoroughly mix everything together. 

  4. Allow the chicken to marinate for at least 15 minutes. However, the longer it marinates, the better. For optimal flavor, it would sit for 4 hours or even 12 hours in the fridge.

  5. When you are ready to cook, place the chicken in a single layer in the air fryer. Cook at 390 Fahrenheit for approximately 15 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit. 

  6. Serve the chicken with a drizzle of fresh lemon juice and pair it alongside your favorite sides like cucumber salad or Persian rice for a complete and satisfying meal.

  • Handle saffron with care: Do not add saffron directly to the chicken. Saffron isn’t cheap, so maximize the flavor, aroma, and color by blooming it (combining it with water) before adding it to the marinade. This technique ensures that you make the most of this precious ingredient.

  • Don’t rush the marination: Patience is key! Saffron needs time to seep into the chicken, infusing it with its exquisite flavor. This also allows the chicken to become tender for an even better tasting protein.

  • Plan ahead for a seamless cooking process: For a stress-free meal, marinate the chicken the night before you plan to serve it. This way, you can have a full meal ready in less than 30 minutes when it’s time to cook.

  • Dairy-Free: For a dairy-free version, just swap the Greek yogurt for a dairy-free plain thick yogurt! The result will be tantalizingly delicious. 

  • Persian Grilled Chicken Recipe: To achieve the grilled variation, after marinating the chicken, you’ll want to just heat a large skillet on medium heat with some olive oil & cook on both sides to sear! Make sure your chicken comes out to an internal temperature of 165F.

  • 1.5 lb chicken breast or thigh
  • 1/4 onion, chopped
  • 1/4 cup organic greek yogurt, plain
