I love my chocolate brownie cauliflower oats recipe for a few reasons. It’s easy to make and just requires a few simple ingredients. Plus, this breakfast recipe can be made fairly quickly and in bulk! Who loves meal prep? Cook once, and have a few meals for the week! Clean-up is a breeze since it only requires one stockpot on the stove.

The Secret Ingredient: Cauliflower

Cauliflower is a great way to bulk up any breakfast. Breakfast is the most important meal of the day, and adding cauliflower to your breakfast can help you get more out of it. Cauliflower is high in fiber, low in carbohydrates and calories, and a great source of vitamins and minerals. It's also versatile enough to be used in a variety of dishes, from omelets to smoothies. Adding cauliflower to your breakfast can help you feel fuller for longer and provide essential nutrients for a healthy start to your day.

What’s in Chocolate Brownie Cauliflower Oats?

First, you’ll need to get oatmeal. Oatmeal is easy to find in stores, and you can use either quick cooking or rolled oats. Try to buy organic when possible because it can be heavily sprayed with pesticides! Next, you’ll want to grab some Cacao Powder. This is basically just the purest form of chocolate. It’s filled with antioxidants, and its anti-aging! After this, you can pick your seeds of choice. I personally love to add either chia seeds, hemp seeds or flaxseeds into this recipe because they’re filled with healthy fats and help keep you full.

Fun fact: If you use hemp seeds just 2-3 tbsp = 11g of protein!

Finally, you’ll need your favorite chocolate protein powder. I love using the Nuzest Rich Chocolate, one of the cleanest proteins on the market. It’s plant based, and made from pea protein. Here are the ingredients: Pea protein isolate, Cocoa powder (organic), Natural flavors, Thaumatin.

How to Make Your Oats

All you’ll need is a burner on the stove, a stockpot with a lid, measuring cups and spoons, and 4-5 small containers with a lid (for storing the oats). To prepare the oats, add them to a medium sized saucepan on medium heat with cauliflower, chia seeds, and your milk of choice. Bring to a boil and then turn down the heat to low, covering the saucepan with a lid for 15 minutes. Stir occasionally and add in water or milk if it begins to get too thick.

Now, it’s time to add the good stuff! Mix in your vanilla extract, cinnamon, sea salt, chocolate protein powder, and maple syrup. Stir until well combined and then separate the oats into 4-5 containers, so you can store them for meal prep. When you’re ready to eat, just take one out of the fridge, pop it in the microwave, and enjoy it with your favorite toppings!

Easy gluten free, dairy free, vegan high protein breakfast packed with healthy fiber to keep you full for hours!

Ingredients

Oatmeal
  • 1 cup oatmeal, rolled or quick cooking (use gluten free if necessary)
  • 4 cups frozen cauliflower rice
  • 1/3 cup cacao powder or unsweetened cocoa
  • 2-3 cups milk of choice
  • 4 tablespoons chia seeds, flaxseeds or hemp seeds
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 2 tablespoons - 1/4 cup maple syrup (depending on taste)
  • 4 scoops chocolate protein powder or collagen (optional)
Topping Options
  • 1 cup sliced strawberries
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • 1/4 cup chocolate chips
  • 1/2 cup any nuts/seeds (pecans, almonds, walnuts, sunflower, pumpkin, macadamia etc.)
  • 4 tablespoons any nut/seed butter

Instructions

To prepare the oats
  1. Add the oatmeal, cauliflower, chia seeds and liquid into a medium size saucepan over medium heat. Bring to a boil then lower heat, cover with a lid and allow it to cook for 15 minutes until soft and creamy. Stir occasionally. If oats get too thick, add water or milk to thin out.
  2. Add the vanilla, cinnamon, sea salt, chocolate protein powder and sweetener. Mix well to combine. Add more liquid if needed to thin out.
  3. Separate the oats into 4-5 different containers, with a lid. Or just 1 large container.
  4. When you’re ready to eat, reheat in the microwave or on the stovetop. Add your toppings of choice & enjoy warm!

Notes

Store your oatmeal in an airtight container in the fridge for up to 4 days.
