Air Fryer Lobster Tails with Saffron Butter Sauce

He has this butter saffron sauce that he poached lobster in, claiming it makes them moist and delicious.

As a Persian, I wanted to incorporate that saffron butter into my own recipe somehow. So I thought, let's create the sauce and drizzle it on top of air-fried lobster tails! This air fryer lobster tails with saffron butter sauce recipe is a luxurious yet straightforward way to cook lobster tails at home. The air fryer cooks the lobster quickly and perfectly, while the saffron butter sauce adds a rich, aromatic touch to the dish.

  • Easy Clean Up:  The removable tray and basket of the air fryer make cleaning up a breeze. No more scrubbing greasy pots and pans!

Tips for Cooking!

Here are a few helpful tips to ensure your air fryer lobster tails turn out perfectly:

  • Cleanliness is Key: Make sure to clean the lobster tails thoroughly before cooking.

  • Thaw and Conquer:  If you're using frozen lobster tails, thaw them completely in the refrigerator overnight or in a cold-water bath for 20-30 minutes.

  • Saffron Power:  A little saffron goes a long way, but don't be shy! It adds an incredible depth of flavor to the dish.

  • Internal Temperature Matters:  The cooked lobster meat should be opaque and white with a tender texture. Use a meat thermometer to ensure the internal temperature reaches at least 140°F (60°C) at its thickest part.

  • Cold Water vs. Warm Water Lobster: Opt for cold-water lobster whenever possible. It tends to have a sweeter and firmer texture.

  • Butcher's Help: If you get your lobster from a fish market, ask them to butterfly the lobster tails for you, saving you a step!

What If You Don't Have an Air Fryer?

No worries! You can still enjoy this delicious recipe using your oven's broiler function. Preheat your oven to broil on low, place the lobster tails on a baking sheet, and broil for about 8 minutes, or until the internal temperature reaches 140°F (60°C).

A Little Bit About Saffron: 

Saffron, a precious spice used extensively in Persian cuisine, is derived from the delicate threads of a crocus flower. Did you know it can take a staggering 75,000 saffron blossoms to produce just one pound of this spice? This is why it comes at such a high price point!

To get the most flavor from the saffron, you'll want to briefly soak the saffron threads in a hot liquid, like warm butter, before adding them to your dish.

 
 

The Recipe:

Now that you're armed with all the knowledge and tips, let's get cooking! Here's what you'll need:

Ingredients:

  • 2 lobster tails (5 oz each)

  • 1/3 cup salted butter 

  • 1 teaspoon extra virgin olive oil

  • 2 cloves garlic, finely minced or crushed

  • 1 tablespoon lemon juice

  • 1/2 teaspoon paprika

  • A pinch of saffron threads

  • Salt, to taste

  • Pepper, to taste

Prep the Lobster Tails:

  • If frozen, thaw the lobster tails overnight in the refrigerator or in a cold-water bath for 20-30 minutes.

  • Pat the lobster tails dry with paper towels.

  • Using sharp kitchen shears, butterfly lobster tails by cutting through the top shell lengthwise down the center, starting from the tail fin end. Be careful not to cut all the way through the bottom lobster shell.

  • Gently pry open the top of the shell and remove the lobster meat.

  • To prevent curlin, thread a skewer lengthwise through the center of the lobster flesh.

  • Saffron Butter Sauce:

    • In a small saucepan over medium heat, melt the salted butter.

    • Add the minced garlic and cook for about 2 minutes, until fragrant.

    • Remove the pan from the heat and stir in the lemon juice, paprika, saffron threads, salt, and black pepper. Let the saffron infuse for a minute, allowing its flavor to bloom.

  • Air Fry!

    • Preheat your air fryer to 400°F (200°C) for 3 minutes.

    • Brush the lobster meat with a little olive oil and season generously with salt and pepper.

    • Place tails, flesh side up, in the air fryer basket and air fry lobster tails.

  • Cook to Perfection:

    • Air fry the lobster tails for 7-8 minutes, or until the lobster meat is opaque and cooked through. The internal temperature measured at the thickest part should reach at least 140°F (60°C).

  • The Grand Finale:

    • Once cooked, remove the lobster tails from the air fryer and carefully remove the skewer (if used).

    • Spoon the flavorful saffron butter sauce generously over the cooked lobster meat.

  • Serve and Savor!

    • Plate your air-fried lobster tails and drizzle with any remaining saffron butter sauce.

    • Garnish with fresh parsley (optional) and lemon wedges for squeezing.

Instructions

  1. If the lobster tails are frozen, thaw them overnight in the refrigerator. Alternatively, you can thaw them in a bag submerged in cold water on the counter for about 30 minutes.
  2. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  3. Butterfly the lobster tails. To butterfly the lobster tails, use a sharp kitchen knife to cut through the top shell down the center. Start from the opposite end of the tail fins. Continue down to cut the tail fins, careful not to cut the tail. Use your thumbs and fingers to spread open the shell & gently pry the shell open and lift the meat out. Run a skewer through the center of the flesh, lengthwise. This is to prevent curling.
  4. Prepare the saffron butter sauce by heating a small saucepan. Add the salted butter, and increase the heat to medium. Add the crushed garlic and cook until fragrant, about 2 minutes. Remove from heat and add the lemon juice, paprika, saffron threads, and a pinch of salt and pepper. Stir until the saffron threads dissolve and the sauce is well combined.
  5. Brush the lobster meat with a little extra virgin olive oil then season with salt & pepper.
  6. Place the lobster tails in the air fryer basket, meat side up.
  7. Air fry the lobster tails at 400°F (200°C) for about 7-8 minutes, or until the meat is opaque and cooked through.
  8. Once the lobster tails are cooked, remove them from the air fryer.
  9. Drizzle the saffron butter sauce over the cooked lobster tails. Serve immediately and enjoy!
